CHOCOLATE & COURGETTE CAKE
4 beaten eggs
150ml vegetable oil
300g soft brown sugar
350g plain flour
2 tsp baking powder
1 tsp vanilla extract
Whisk eggs, oil and milk in a bowl then add sugar and mix well
Sift dry ingredients then fold into mixture.
Finely grate courgettes and stir into mixture with vanilla.
Spoon in to 20cm by 30cm or 2 X 18cm trays and bake at 190C, gas 5 for 40 mins or 30 if using two tins.
1 tsp van ess
250g icing sugar
Spread onto cake and dust with cocoa powder.
